On August 10 Team Swem competed in and won the W&M Bakeshop’s Cupcake Wars. The challenge was to create and produce two batches of cupcakes, one signature and one unique or creative, using recipes and ingredients Dining Services provided. The result was 72 cupcakes, with the bakers presenting 12 to a panel of judges. Executive Pastry Chef Dominique Lewis and Pastry Chef Rachel Kauder provided kitchen assistance.
Team Swem included Dean of University Libraries Carrie Cooper, Swem Board Chair Bee McLeod, Senior Director of Development Karlene Jennings, and Development Assistant Mary Schmotzer. Together they created the winning cupcakes – the “PBJ” and the “Almond Joyful.” After the win, Dean Cooper said, “Spending the afternoon baking with Bee, Karlene, and Mary was so much fun. The fact that we had delectable cupcakes to take home was a bonus!”
